Key Trends
Increased Production – According to the USDA, production of
beef and other meat products are projected to increase steadily by 2025. Meat
continues to be a staple menu item in many countries around the world.
Quality – Although there is speculation about differences in quality between fresh or
chilled beef and frozen beef, the food intake of cattle is an important factor
in the taste of the beef. Grass-fed beef which is humanely-raised results in
better quality beef that consumers are more willing to purchase.
Convenience for Consumers – Especially in the United States,
convenient packaging which allows consumers to reseal, freeze, or purchase in
smaller quantities is becoming more desirable. Pre-packaged meat is growing in
popularity, with 60% of respondents to a recent survey stating they felt it was
on par with the quality of meat for sale at a deli.
